Launched in 2006 as an organic brand for HOFER (ALDI SÜD Austria), Zurück zum Ursprung is now one of the best-known organic umbrella brands in the European food retail sector. Built on the LAMPERT standard with its eight core values—including regional sourcing, environmental protection, and animal welfare—the brand combines consistent sustainability with complete transparency through the LAMPERT database. Zurück zum Ursprung has proven that organic products not only work in discount stores but can also set new standards.

What began in Austria as “Zurück zum Ursprung” was introduced to the Swiss market in 2022: “retour aux sources” launched at ALDI SUISSE with the same quality standards, adapted to the specific characteristics of the Swiss market and its agricultural sector. The brand stands for traceable origin, location-specific production, and scientifically proven sustainability—and demonstrates that the LAMPERT system can be successfully adapted to new markets and structures.

In addition to its two umbrella brands, “Zurück zum Ursprung” and “retour aux sources,” LAMPERT has supported a wide range of other projects over the years—from developing individual product lines and advising retail companies and regions to engaging in scientific collaborations and political initiatives. Here is a selection:

Making institutional food service cost-effective and sustainable.

Cafeterias are places of everyday life—noisy, fast-paced, and under cost pressure. Switching to organic food here sends a message that goes far beyond the plate.

In May 2019, Österreichische Mensen GmbH (ÖMBG) commissioned the LAMPERT team to develop a concept for sustainable food procurement. On the initiative of Director Meinhard Lukas, Johannes Kepler University Linz became the first Austrian university to gradually switch its catering to organic and regional products—while keeping prices the same for students. Up to 1,500 meals are served daily at JKU. The first step: a complete switch to organic meat, organic sausage, and organic poultry.

From formulation to traceability—all under one roof.

The LAMPERT concept for ÖMBG was not merely a strategic document. It was a practical roadmap—designed for implementation under the real-world conditions of a large-scale catering operation.

This included analyzing all existing recipes, selecting suitable organic suppliers, establishing traceability, adapting and developing new recipes, and raising awareness among kitchen staff. The new system was introduced gradually—starting with pilot projects that demonstrated what worked in day-to-day operations before the full transition took place.

More than just a change. A sign.

As a public institution, JKU serves as a role model—and has lived up to that role with this initiative. The transition meant: no more factory-farmed meat on students’ plates, a smaller ecological footprint in everyday campus life, and greater transparency regarding the origin and quality of ingredients. And it proved that all of this is possible without putting a strain on students’ wallets. In 2018, Austrian university dining halls processed around 350 tons of meat and sausage products nationwide—with the JKU accounting for a tenth of that amount alone. Every ton that has come from organic farming since then is a result of this decision.

Quality standards for authentic natural products.

LAMPERT developed the Original Alpenmedizin Standards for Alpenmedizin GmbH, a subsidiary of M.C.M. Klosterfrau Healthcare GmbH—comprehensive sustainability guidelines for agriculture and processing in product categories such as herbs, honey, fruit, oilseeds, vinegar, oil, juice, distillates, and salt.

The challenge was clear: How do you preserve the authenticity and quality of natural raw materials throughout the entire value chain—from agriculture to the final product? The answer was a standard that does not merely promise quality through certifications, but ensures it through continuous monitoring.

Alpine medicine without compromise.

LAMPERT developed defined quality criteria and handled quality assurance and audits for raw material suppliers. Suppliers were qualified, each Alpenmedizin end product was approved, and the Alpenmedizin label was awarded. In addition, LAMPERT provided support in selecting suitable organic raw material suppliers (sourcing), offered specialized consulting in agriculture and processing, and ensured full traceability of products and raw materials. Systematic root cause analysis in the event of deviations ensured that the standard was not merely a set of guidelines on paper but was actively implemented.

Responsible baby and infant formula – From birth to the first birthday.

Milk and baby food are particularly sensitive products for consumers, as they lay the foundation for their children’s healthy lives.

Parents therefore place a high priority on organic certifications, transparency, and the origin of ingredients (Market Research Report).

Baby food and infant formula of the highest quality – 100% palm oil-free.

At LAMPERT, we developed a unique line of milk and baby food that offered much more than just organic certification. For HOFER and Zurück zum Ursprung, we created a milk formula made from regional hay-fed milk that meets the strict LAMPERT standards. Thanks to the high-quality raw materials and processing, the milk formula contained the essential palmitic acid without the need to use palm oil. In addition to starter and follow-on formulas made from organic cow’s and goat’s milk, there were also various baby food products, such as jars and purees.

The concept behind " Zurück zum Ursprung " organic baby food focused strictly on the natural quality of the raw ingredients and the deliberate avoidance of additives.

No tropical oils

Our organic baby food was the first in Austria to be made entirely without palm oil or coconut oil. By using organic hay-fed milk from mountain farmers in the Murau region of Styria as whole milk, we naturally ensure the fatty acid profile that is essential for a baby’s development.

Authentic regional character

All value-adding ingredients came from regional supply chains.

The highest standards of quality

In accordance with Austrian guidelines for complementary foods, no mono- or disaccharides, salt, or flavorings were added. The product line also contained no emulsifiers or stabilizers.

Unparalleled transparency

Using the batch code or best-before date, the origin of the raw materials could be traced in real time all the way back to the farmers who grew them.

Proven sustainability

The sustainability performance of organic farming was also assessed by the Research Institute of Organic Agriculture (FiBL) using the SMART method and compared with that of conventional farming. The results were clearly displayed on packaging and available online.

A symbol for the next generation.

The product range included a full line of infant formula, jarred baby food, and cereal porridges. Production in accordance with the “Prüf Nach!” standard went far beyond the requirements of the EU Organic Regulation, demonstrating that consistent environmental and animal protection is possible on a large scale.

Sustainable Skincare – Organic Cosmetics That Go the Extra Mile.

Refreshing, nourishing, and packed with valuable ingredients—and, of course, free of mineral oils—that was the secret formula behind the Zurück zum Ursprung organic natural cosmetics line . Featuring the finest formulations made from high-quality oils and sustainable ingredients that were traceable all the way back to the farmers who grew them.

In the spring of 2022, five organic cosmetic products were added to the permanent product line for the first time: shampoo and shower gel, deodorant, hand cream, bar soap, and lip balm.

Free of residues and pesticides – uncompromising quality.

The entire product range was free of residues and pesticides. This is not a given in the cosmetics industry—it required genuine collaboration with farmers, strict controls, and full responsibility across the entire supply chain. All active oils were sustainably produced and sourced regionally. Sea buckthorn berries, sunflowers, and hemp—the valuable ingredients were extracted from these raw materials and were traceable online all the way back to the farmers who grew them.
